This protein is found in wheat, barley, oats, rye and triticale. As a storage protein, it provides a reserve of amino acids for the developing seedling when germination occurs.

Temperatures above 55°C (131°F) can adversely affect functionality.

The product comes as a dry powder. Commercial vital wheat gluten is roughly 75% protein, 6% total fat, 6% moisture and <1% ash.
